Diastatic Malt Powder is made from malted barley that contains active enzymes which break down more of the complex sugars in the dough. This results in a bread that has more volume, lighter texture, and a crispier deep brown crust. Diastatic malt is added to many high-quality European flours as a natural flour improver. Adding it into your bread recipes in small amounts (0.5 – 1%) will result in a higher quality loaf.
